A quest for the PERFECT chocolate chip cookies!

Ah…the perfect chocolate cookie! For me it is soft and chewy, filled with chocolate, and best just out of the oven!  If I’m being perfectly honest, the best is simply the raw dough!  But as that is frowned upon, I suppose I will bake them…

For the longest time I had the PERFECT recipe!  Friends raved about them.  I even perfected baking them in our ancient electric oven that was filled with hot spots.  Then one day, they were not perfect anymore.  I have tried every combination of changes to the recipe to get back to how I used to make them, but they just won’t bake up the same anymore!  Maybe that oven was magic…

Anyway…off I set on a quest to find the perfect cookies…again.  Along the way I have discovered two ingredients that seem to make the difference between an OK chocolate chip cookie and this…

…Absolute cookie perfection!

2 Essential Ingredients:

  • Melted Butter: The melted butter seems to help the cookies have that nice, just set crust over the top that contains the fabulously gooey center!  It is a good idea to refrigerate your balls of dough for 10-ish minutes before baking them though, because they tend to spread more since the butter has already melted.  (or save time by sticking them in the freezer for 2-3 minutes).
  • Almond Extract: I know there will be people out there who do not agree with me. Either they do not like the taste, or their family/friends have a nut allergy.  But for those of you who like the flavor, I believe almond extract adds a wonderful, nutty undertone that deepens the flavor and really makes the cookie pop!  Note: I generally use the amount of vanilla extract listed in the recipe, then add 1/4-1/2 tsp of almond extract.
  • Ok, I know I said 2, but this last one is more of a side note.  Brown Sugar:  All chocolate chip cookies call for brown sugar.  But I have had the most luck with recipes that call for at least double the amount of brown sugar as granulated sugar.  This gives the cookie a nice caramelized flavor!
